Last night, as my bugs nestled into the couch preparing  to watch The Polar Express,  I went into the kitchen to make us some popcorn; but rather than making plain, ordinary popcorn, I decided to surprise the boys with Polar Express Hot Chocolate Popcorn. And yes, it tastes every bit as delicious as it sounds!

Polar Express Hot Chocolate Popcorn

( yields 6 cups)

Ingredients:

  • 3 cups of popcorn
  • 1 cup of mini marshmallows
  • 6 ounces of semi-sweet chocolate
  • a pinch of salt
  • crushed candy canes

Instructions:

Break the chocolate into pieces and microwave it at 30 second intervals, stirring each time, in order to avoid burning the chocolate. Next, crush some candy canes inside of a ziplock bag, and sprinkle them on top of your popcorn. Add in the marshmallows and then drizzle the melted chocolate over top of your popcorn mixture, making sure to incorporate all of the ingredients together. Put the popcorn mixture into the fridge for a few minutes, until the chocolate hardens, then break it apart and serve!  

The hardest part about making this rich and delectably minty-chocolate treat is waiting for the chocolate to set before eating it. Ha! Who am I kidding? My fingers were in the bowl before the chocolate even had a chance to cool!

Needless to say, my bugs enjoyed  it too. It was the perfect snack to compliment one of their favourite holiday movies!
